Food waste is a major issue for the catering industry and one that has been estimated to cost the UK hospitality and food service industry £2.5 billion per annum (source: WRAP 2013).

Landfill costs, which currently cost the average kitchen thousands of pounds every year will only continue to rise, while maceration has been outlawed in Ireland (2013) and Scotland (2014), and further legislation will come into force in Wales (under consultation for 2016/17) and Northern Ireland (2016).

All this adds up to a large and expensive problem for kitchen owners.
